Each Friday, Co-Owner and Vice President Bill Luketich cooks breakfast for the entire staff. His recipes range from Cap'n Crunch pancakes to easy cheesy breakfast casseroles.
This week's recipe is as follows:
Chipotle Gouda & Gruyere with Ham Breakfast Casserole
- 38 eggs
- 1 pack chipotle gouda cheese (8 oz)
- 1 pack gruyere cheese (8 oz)
- 2 lbs. ham cubed or diced small
- 1 loaf rustic bread
- 3 bell peppers
- 1 large spanish onion, diced
- 1 pack mushrooms, sliced
- 2 cups whole milk
- green onions, finely diced
- salt and pepper to taste
Sweat the bell peppers and onions. Add cut up ham and mushrooms. Cook for 10 minutes. Break up rustic bread into chunks and place at bottom of a large casserole dish.
Pour cooled vegetable/ham mixture over the top of the bread. Grate cheese and spread over the ham/bread in casserole.
Whisk eggs and milk together, then pour egg mixture into casserole pan. Top with green onions. Cook for about 40 minutes at 425 degrees until knife comes out clean.
